It asked to be something different than what I had originally envisioned. So instead of correcting it, sending it back to where I purchased it, I listened.
Honey is alive with energy. The energy of the bees, the seasons, flowers, the wind, the rain, sunshine, the snow..
When I sit with this honey, as it infuses the essence from the cinnamon and vanilla bean and other dried herbs, slowly, keeping it cool, letting crystals form at their own pace - this feels less like creating something, and more like witnessing something become.
These batches are being infused gently, without rushing, without forcing it into any particular outcome. It wants to be silky, golden, comforting. Something you savor slowly.
This first step, infusing the honey with spices and herbs, will continue for 2 to 3 weeks.
And then we move onto the second step, which will continue for 3 to 4 weeks. During this process, the honey changes it's flavor, aroma and texture profiles.
It will then be ready to offer to you, sometime in April, 2026.
I'm excited about this honey journey experience. It's a reminder of the relationship between us and nature, and what happens if we surrender and just allow something to become what it wants to be.
